Cup size is a menu decision, not just a crockery one. Serving a flat white in a cup meant for a latte means either a weak drink or a bigger dose, and both cost you.

Our Royal Genware range covers bowl-shaped cappuccino cups at 25cl/8.75oz with matching saucers for 25cl and 31cl, in commercial cases of six.

A workable set for most cafés is three sizes: espresso, a 20–25cl for cappuccino and flat white, and a larger one for latte and americano. More than that complicates storage and service.

Preheat cups if you can. A cold cup takes several degrees off an espresso immediately and is the most common reason a good shot arrives tasting flat.
