Where the puck goes is a genuine design decision on a busy bar. Knocking into a bin splashes, knocking into the sink blocks the drain, and both slow service.

Whatever you choose, empty it every service. Wet spent grounds ferment fast and it is the most common source of a sour smell behind a counter that nobody can locate.
